Years ago I'd read that eggs explode if frozen and I didn't fancy getting egg on my face when I opened the freezer door, but I guess that won't happen if they've been taken out of the shell beforehand.
The single egg I bought last week is still sitting reproachfully unused in my fridge (date stamped 2nd November, so not "off"), so I'll give your method a go as it would certainly be useful to have egg on standby for "whenever". Thanks for the tip! :T0
