Pleasant quiet-ish places to live south of London?

Hoping to get some recommendations! I was originally thinking of somewhere like Steyning, Henfield or Lindfield, as these are the places I know, but I've just realised that getting a car means my range is somewhat broader than previously expected and there are likely places out there I haven't even thought of.

In an ideal world I'd like to live somewhere between Chichester and Tunbridge Wells, not on the coast, in a rural-ish location with countryside on my doorstep (as literally as possible), but also with some kind of village or small town within reach on foot (willing to compromise on that part). What I really don't want is to be in miles and miles of suburbs or newbuild estates. I don't need to commute anywhere on a regular basis, but somewhere within striking distance to both London and Brighton would be nice. The budget is around £500,000 and I'm hoping for a 3-bed detached house or bungalow with enough garden to have a seating area, some lawn and some fruit bushes at the back.

Thanks in advance!
