Cooking bacon - ideas please

Hi all. I have taken a packet of cooking bacon out of the freezer to make a bacon and mushroom pasta but there is far too much, what can I do with the rest? I usually make lentil and bacon soup but I’m looking for something new. Thanks.

    Top baked potatoes with crispy bacon and cheese, make egg and bacon omelettes or fried potatoes with bacon and onion etc, add it to spinach or other veggie sides.

    Cook it up and refreeze for when you want to add bacon.

    Or do a quiche lorraine.

  • Bacon sandwiches for lunch!

    Fry with some onion and add to cooked cabbage as a tasty veg.
  • An Irish staple - bacon and cabbage.
    Sound hideous, but trust me on this. Traditionally you would use bacon chops, but there's no real reason why rashers can't be used. Serve the bacon on a bed of cabbage, and top with parsley sauce. Don't knock it til you're tried it...

  • Thanks all - went with Thriftylass’s suggestion and used it with some left over boiled new potatoes, onions and some frozen spinach which had been lingering in the freezer for about a year, it was lovely. Will definitely be trying the other suggestions too as I have several packets stashed.
  • Manxmum - next time you're freezing bacon, try putting it into smaller portions before freezing. Much simpler to use up :j. I do that with all the meat that I'm freezing because, most of the time, there's only the two of us to cook for.

    I second that. I freeze everything in portions for 2 of us.

  • Yes I should have split the packs - they are 500g each and I didn’t really realise just how much that is, there are 4 of us (two smalls) but half a pack is more than enough. I will remember that in future (I still have 3 more full packs in the freezer).

    Makes a great base for lentil, split pea or minestrone soup.:) Half a pack is enough for a decent sized pot of soup.
