I normally go for a fixed tariff for a year. :)
However, I was wondering how price stable are variable tariffs? :o

Well they'll all gone up this year, some two or three times.

At least I know what my bill will be from now to next September.

It is a good question worthy of a personal view. Some suppliers only offer a single variable tariff which I assume will have to come in under the Ofgem price cap. It follows that variable tariffs will be more stable in the short term than was the case in the past few months. That said, I would expect to see variable tariffs rise by the cap percentage increase determined by Ofgem. I think that they will review the cap every 6 months but I may be wrong.

Fixed tarifffs do though offer at least 12 months price certainty.
