Vegetarian/vegan slow cooker tips for a novice

Hi folks,
My Dd2 ‘surprised’ me yesterday by buying me a slow cooker (which was drastically reduced in Mr T where she works).Never having even considered buying one before, I am at a loss at to where to start as I’d like to make an effort so show my gratitude
So...... I ‘d very much appreciate some tips/simple recipes suitable for veggies and vegans. I make a lot of vegetable curries, soups, ratatouille, so anything along those lines would be great. Also are there any healthy desserts I could make? Can I bake apples in it for example? is there anything I really shouldn’t use it for?

I just chuck all the same ingredients I would for curries, soups etc in and leave it all day! Wish I could say there was more science to it!!0

I think you'll find it's super forgiving! When I made a bolognese I do the following
fry and onion
add 2 chopped cloves garlic, 2 chopped carrots, 2 sticks chopped celery
then tip in:
1 tbsp dried herbs (oregano, basil/mixed herbs)
1/2 tbsp veggie gravy granules
a stock cube
1 tin tomatoes
1 tbsp tom puree
1 mug full of dry soya mince
1-2 tins (fill the empty can from tomatoes) of water - enough to just cover ingredients
Then I'll leave it on all day on low (about 8-10 hours) and it's perfect. If it's only 4-6 hours before dinner I'll put it on high.
With curries I just bung it all in. Enough water to just cover veg and half a mugful of lentils to ensure it thickens.1 -

That's just reminded me.
Just gone and put a cup of (brown) rice and 2 cups boiling water in my little slowcooker to cook on high. It will take about an hour.
Curry is on the menu tonight.0 -
