This is a genuine question about this scenario, but what is the difference between this issue with a restaurant, and being undercharged at a supermarket?

You didnt though, and businesses arent in the position of writing off mistakes that cost them money.

    I'd pay it.

I wonder if the business made a mistake and overcharged, that they would contact the customer to offer a refund? I doubt it. And what's to say the revised amount that they say is owed is now correct? The manager/waiter made various mistakes so imo they should write it off. If they are more careful with how they issue the bills then they won't need to be in a position of writing umpteen bills off and losing money.
There's a storm coming, Mr Johnson. You and your friends better batten down the hatches, because when it hits, you're all gonna wonder how you ever thought you could live so large and leave so little for the rest of us.

You ate, you owe the money, pay it. If it makes you feel better you'll probably save the waiter having to make up for his mistake.

Why should the waiter bear the brunt of this, when the manager is equally (if not more so) liable for the error?

The only time I've seen this sort of thing was buying a bespoke made to measure on-off item.
I thought the quote was too low and queried it.
The manufacturer went back to the raw material wholesaler and queried the price of the materials as they also now thought it low in retrospect.
Everyone in the chain back confirmed that the price was right.
OK I said in which case I accept the quote - now make it
Then the problem emerged - the raw materials price was indeed wrong which had then fed though into incorrect quoted prices all the way down.
In the end the raw materials supplier absorbed the error themselves - mainly becasue everyone in the chain had queried the price and had been told emphatically that it was indeed correct - when it was actually not.
