Roof - mechanical fixings

Hello,
We are in the process of getting our new roof done, but we have a question on mechanical fixing with mortar on ridge tiles.
The mechanical fixings stick out at about 2 inches due to two of the foam washers being used on top of one another above the metal plank (difficult to explain without the use of pictures).! Though, should two foam!washers be used in the same place on top of one another, or should the larger washer sit under the metal plank?
Our roof currently looks a little spikey down the ridges, and we would really appreciate your opinion!
