Homemade sweets that will keep for a long time

Every year for Christmas I make homemade sweets (fudge, toffee, coconut ice etc) for my family and friends. This year though I am not sure if I will have time to do it in December so I was wondering if anyone has any recipes that will keep for around 7-8 weeks so I can get it all made in advance when I have plenty of time.
I usually package it in cellophane bags and seal them with a bag sealer if that makes any difference to the shelf life.

  • Treacle toffee will keep for a year in the freezer and then about 6 weeks after it's been defrosted.

  • I think that mint creams keep well. You only need icing sugar and egg white and mint flavour.

    Rum truffles need about 6-8 weeks for the flavour to mature.

    If you have the freezer space, I know that fudges freezes well. Every so often I have the hankering for it and make it, far too much and it goes in the freezer to be found 6 months later! It is always fine once defrosted.

    Anything with fresh cream as an ingredient is not going to last long.

    Otherwise I would have suggested truffles - easy enough to make a ganache melting chocolate into scalding cream, and adding a dash of your preferred tipple (Cointreau in my case).

  • You can substitute fresh cream for Elmlea, or Alpro Soya Cream ( I have to make dairy free truffles). The Elmlea ones will keep for up to three months. I've kept the soya ones for about two months - but they don't last any longer because I've eaten them......

  • Just in case it’s helpful, I use Tesco Double Cream Alternative in ganache for cake decorating. It’s long life. I don’t know if that would mean it would keep longer than normal double cream.
