We eat this a lot when the chard or spinach beet goes mad on the allotment. It's a recipe I found online but I've altered it quite a lot. We like it with potato wedges and roasted mushrooms and tomatoes. I prefer it cold but MrC likes it best hot.
Spinach and cheese pie
Ingredients
Serves: 5
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced - I add 4 cloves, we like garlic.
500gms to 1kg spinach/ Swiss chard or spinach beet leaves rinsed and chopped ( you need at least 500gms but don't worry if you've not got a full kg)
30g chopped fresh parsley - miss it out if you haven't any.
2 eggs, lightly beaten
125g ricotta cheese
250g crumbled feta cheese or 6oz strong cheddar.
8 sheets filo pastry
Preheat oven to 180 C / Gas 4. Lightly oil a 23cm square baking tin.
Heat 1 tablespoon olive oil in a large frying pan over medium heat. Saute onion until soft and very lightly browned. Add garlic and fry for a further minute. Stir in spinach and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
In a medium bowl, mix together eggs, ricotta and feta. Stir in spinach mixture. Lay 1 sheet of filo in prepared baking tin, and brush lightly with olive oil. Lay another sheet of filo on top, brush with olive oil, and repeat process with two more sheets of filo. The sheets will overlap the tin. Spread spinach and cheese mixture into tin and fold overhanging filo over filling. Brush with oil, then layer remaining 4 sheets of filo, brushing each with oil. Tuck overhanging filo into tin to seal filling.
Bake in preheated oven for 30 to 40 minutes, until golden brown.0 -
Great thread - I'm mainly veggie and aim to only cook meat for my OH 3 times a week. I try and have at least a couple of vegan days a week but would struggle to give up dairy and eggs altogether, although I know the production of them is also heavy on resources (and animal welfare)
I use Veg Every Day and Much More Veg by HFW, I'll try and think of some favourite recipes0
