What I did for the years I had to travel in school holidays is add up to an extra week for travel. Count this as part of the holiday. Hopefully those travelling with you will have the time to do this.
I've seen so many places in France, Spain, Portugal and Italy by staying overnight or stopping for a leisurely lunch en route. We generally used Ibis or Campanile. Basic but a decent breakfast and a clean, comfortable bed and bathroom.0
