It's very difficult. That's why you use first class and not signed for if you want to make sure someone receives legal documents.

That's the whole point, it's extremely difficult to prove you did not receive a normal First Class letter that someone else has a proof of posting for. This is why it is normally the recommended method to use for legal documents.
However it is extremely easy to prove you did not receive a Signed For letter if you refuse to sign for it and reject the delivery.
I have a question for you, do UK courts normally post documents using a normal First Class or Signed For service?Every generation blames the one before...
