Fire Ins Claim - Help?

In may 2007 we had a kitchen fire and made a claim via our Liverpool Victoria ins policy. Part of the claim involved replacement of a section of our granite work top (the kitchen was only 6 months old) which was slightly burnt around the electric hob.
The Ins co appointed a granite specialist to look at the damage to see whether it could be repaired or would need replacing. I was advised at this time it could not be repaired but would need replacing and I was happy with this. This was in June 07.
In August the granite co visited our house to remove the existing granite piece and returned a week or so later with a new piece. However, the new piece is a poor match to the remaining work surface-the colour being blue pearl, the new piece has a far more lighter silvery colour than the existing parts. The granite co have admitted it is a poor match.
Clearly we were not happy with this as at no point were we advised that there maybe not a close match to the existing work tops. Had we known this was a possibility we would have kept the old piece which would have been preferable to mis matching work tops in a new £15k kitchen.
The Inso Co is refusing to cover the cost of the remaining work tops and have said I will have to pay £1500 + VAT towards the cost. This I have refused as we were never advised in the first place there maybe a mis match and consequently never given the option to retain what we already had.
Does anyone know how I stand with this? In the meantime I have finally managed to get a senior manager to review the case as the previous case handler suggested I would now need to proceed to the ombudsman.
