Chasing through a padstone sounds absurd, and one would normally go to the side of it. Regardless, on a vertical chase you are OK at 25mm

Building regs stipulate a maximum depth of 1/3 the thickness of a wall for vertical chases and a max depth of 1/6 for horizontal.

Looking at the image, it appears to be a double thickness solid brick wall built sometime around 1915. At a guess, some 8" thick. A 1" deep chase is not going to be a major issue. That said, the width, and the fact it has gone through a pad stone might. May be worth consulting a structural engineer if you have any concerns about it.

Oh, and use lime plaster on that wall, not plasterboard or gypsum. Plastering with lime is no harder than using Thistle plaster - Most plasterers will turn their nose up at lime because they can't be bothered, the remaining few will charge a premium because they can.

framapic.org/gallery#lhqwIsWZ4wL7/d6w1s4jPdEhf.jpg - Doesn't look like anything to worry about. Plenty of meat under the steels, and loads of cement to boot.
