Omelette is a French dish whereby a barely cooked egg 'pancake' is folded or rolled around some filling having been briefly cooked over a very high heat.
Frittata is a thoroughly cooked combination of beaten eggs and other ingredients which is browned on both sides before being served in slices, either hot or cold.
A frittata is more like the thing which we used to call Spanish omelette in our house ie loads of stuff barely held together with beaten egg and usually including chopped potatoes, onions and peppers. There used to be a fantastic sandwich shop in Cardiff (years ago before such things became popular and expensive) and the speciality was a wedge of Spanish omelette sandwiched in a piece of crusty loaf. Nowadays it would, perhaps, be called "pan fried frittata in soft ciabatta" !0 -
Having said that a Spanish Omelette is a Tortilla ...
