Unregistered land

If no one can get to the middle bit without passing over the neighbour's land the middle bit is no use to anyone apart from the neighbour. It is now landlocked so useless.0

When you say "his land" - do you mean land that is really his or this land he is trying to steal?

I can understand concern - from the pov of it's not nice knowing one has the sort of neighbour that steals any land they want if they get the chance (I've got one like it myself - and I've had to kick them out of a bit of my garden they thought they'd succeeded in stealing and they've also tried to steal several other bits of land and it leaves a nasty taste in the mouth to know there's a thief living next door).0 -
The 3 ends of the pieces of land run adjacent to my priperty and he has put fencing across all of the outer perimeter of the 3 pieces effectively landlocking the middle piece. The only way to access would be through a perimeter gate on one of the pieces he owns which he locks!
The only way i could access directly from my property would be to climd the fence that he has put up or cut an opening in it!0 -

Have you thought about knocking on the door of this person and asking what their game is regarding this land as they don't own it?An answer isn't spam just because you don't like it......0

The land borders both the OP's land (on one side) and the neighbour's (on at least two sides, possibly 3 - we are not told what is on the far side but it is presumably also the neighbour's land; if that was public land he could access it from there. If it is someone else's private land then they also previously had access, but he doesn't mention this, so I presume it's not the case.)
Basically he has clouded the issue by saying incorrectly "I can't access it except by crossing his land".
He can access it directly from his boundary, but the neighbour has placed a fence on the land which he does not own, along the border with the OP's land. It's only the fence that prevents the OP accessing it directly.
Of course there's no reason the OP can't climb this fence and then erect his own fence round the other 3 sides; he has an equal right to the neighbour to do this. I wouldn't really recommend this though, speaking to the neighbour would seem more advisable.0
