Adding onto deeds (and mortgage) - question re stamp duty

Hello
I currently work as a physio for a recruitment agency and am going to start working as a permanent member of staff at the same place of work, so I can get my name on the mortgage and house deeds with my partner. However, this process might take a couple of months until I have the letter confirming my permanent job offer.
We've been looking for a property for a long time so are keen to get on and probably have enough funds to proceed just in my partners name (mortgage approval sorted in his name - could not add me in as an employed person with my current work status and do not want to go through a mortgage broker or with a company that lends to temp workers as rates not as good). Not too concerned about adding me onto the mortgage but the question I do have is....
If we are buying a property for eg. £275,000 and are unmarried partners who will have an equal share in the property, and neither own another property, are there any stamp duty implications or fees for adding me on at a later stage? The mortgage will be for ~£167,000.
As far as I can see from reading other threads we could apply to have me on the house deeds directly by filling in a form, rather than requiring the solicitor to do this. Is this correct?
I mostly don't understand stamp duty stuff.
So probable plan:
-on finding a property, put the property (mortgage and deeds) in partner's name
-if my permanent job confirmation letter is available prior to completion then add me on to both mortgage and deeds
-if the letter is not available until after completion add me on to mortgage and deeds then, in the cheapest most simple way possible -advice appreciated
