If you've called a number you know is a legit number for Sainsbury why would you not be happy giving them your CC number to establish your id?

Just call the number on the back of your card to speak with them.
They should be able to verify you without the need for your card number.
But as you have called them you shouldn't have an issue providing it to them.

Actually I would have an issue with this and would probably be inclined to tell them what to do with their card.
It is not reasonable that on a year old account they decline a transaction and insist the cardholder fax them a copy of photo ID. If there was any question in this regard it should have arisen at the time of application, not a year later.
There are other ways to verify if the card has been stolen and is being fraudulently used other than this. I have never encountered such a thing.0
