You're going round in circles. Yes, you can settle privately (but that's not sensible). No, you can't get her insurance company to forget that they've been told about it.

Then why ask if you have to go through hls insurance?
If your insurance is going to ultimately deal with this then you can see if it's cost effective to reimburse them their outlay to get your lost NCD reinstated.
But as advised you do now need to inform your insurer of the incident - they are going to find out!
You breach your policy conditions by not doing so - even if you manage to get the third party to cancel the claim with their insurer0
