Much will depend on what any signage said (if anything) either on the ticket machine or general signs around the car park. Do you have/can you take photos?
Who owns the car park - private or council? Complain to them.
If it's not clear about what you're actually paying for, you might have a case via Trading Standards (but they seem more interested in knock-off DVDs and fake denims!).Please note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

The Website suggests that you have to enter after 6.00pm to get the £7.50 rate:-

The £15 is for parking for more than 4 hours but less than 6.0 -

Did you not notice loads of cars hanging round at the bottom of the ramp waiting for the 6pm changeover ? Last time I went it was well signed at the bottom of the ramp, on the entry barriers and on the price list before the barriers.
Personally I don't think you've any chance of fighting it0 -
I am inclined to believe that this is a case of caveat emptor, of failing to read the small print. You never know how far you can go until you go too far.0
