birthday cake....

it's my daughters 1st birthday next saturday, and i'm making her birthday cake :eek:
anyway, i can whip up a fruit cake no probs, but i'm making a sponge and i usually kill them. i want to make a madeira cake, i have a recipie, but how long before the day can i make it?
i am making a cake in the shape of a toy box and decorating it with icing.
(it will be 3 6" cakes on top of each other) i only have 1 tin so i need to make each cake separately if this matters

wish i could help you but i made a madeira cake the other day and it was like a pavement slab so you dont want any advise from me.:p

The Be-Ro site has a number of different recipes, if that helps.. not sure what your recipe is so its difficult to advise - could you write it out, or pm it to me? Generally when sponge recipes go flat like that its because the air has been knocked out of it - either at the folding stage, the dumping the cake in the tin stage or at the cooking stage.. as for how long before you need it.. it can be made a couple days before hand and kept in a tin to prevent it drying out.. the big problem you'll have is if you make a cake that won't fit in a tin. If you ice (say with butter cream) the whole thing then it will help to prevent the dryness problem, but you'll also need to allow 24 hours for the icing to set.
