Hi
So I've seen many sizes are 1010mm but then there's others that are 970mm.
I guess these are two different sizes and the measurer isn't just measuring in a different place?
Thanks

There's no rules on how big a sink needs to be. Different designs are different sizes.Everything that is supposed to be in heaven is already here on earth.

yes they do come in different sizes.
Not sure if you are fitting new or replacing. If replacing measure the hole rather than the sink if you can and compare to fitting guide on new sink. If you cant get access measure the sink and take 10mm off each side. Then go for one the same size or bigger - it's easy enough just to cut the hole a bit bigger.
If fitting to new worktop then it doesn't matter anyway as you'll just cut to size.
For example i replaced an old hideous resin one with a new stainless steel one. The new one was near but a few cm different. depth wise it was a little smaller tan previous but the hole in the worktop was fine as it had some margin in it. The width was actually bigger by a few cm so just needed to cut a hole - easy enough done using a jigsaw and a worktop blade (stanley ones are less than a fiver in homebase at the moment!).
Best of luck!0
