I can recommend Sam Stern's books too my eldest has actually cooked from them  (a rare sight him in the kitchen unless it's collecting food!!)
Carrot cake is pretty easy and usually comes out well.
Think theres some different recipes in the recipe thread for these :D I made a few today as FIL wants a goodie bag to take home with him...

You should have seen the state of the kitchen too after he had used every untensil, bowl and baking tray in the house

LOL, when I moved out and started having to cook for myself I made Delias meatballs and tomato sauce with spaggetti for my house mates and friends. I managed to use everything in the kitchen too. Even now I cant think how I managed that... Frying pan, pan for the sauce, another pan for the spaghetti... what else could I have used? Quite an accomplishment I think.

I'm sure he'll learn to be a bit more frugal with your help!

Thank you all for sharing my pain and giving me loads of ideas.....my son helped with making the gravy today for the roast dinner. Not so sure that was a good idea considering the mess he made but hey, he has to learn eh? I also hate anyone in my kitchen when I am cooking so I had to bite my tongue hard and smile sweetly while he helped make the Yorkshire pudding. Mind you, as he helped me he got the scales out to measure the flour and promptly dropped them and yep, you guessed it, broke them too!

    Oh well......
My second favorite household chore is ironing. My first being, hitting my head on the top bunk bed until I faint.

Why don't you "give" him a day of the week?

For example, every Friday we have "restuarant night" in our house, with food from a themed country of the week that we've been learning about with table cloth, candles, written menus, wine etc etc. The children love it as it's fun and it allows them to have an input into what we eat (as we plan it through the week) and they also willingly try new foods.

You could do something similar for your son and give him a day each week where he could cook a themed meal with pudding for the family. Start with Italian or Chinese and get more adventurous.......just an idea.
"One day I realised that when you are lying in your grave, it's no good saying, "I was too shy, too frightened."
Because by then you've blown your chances. That's it."

This is how I started to cook independantly,my time was Sunday morning when my parents went with my brother to football. I started by doing a pudding for our sunday lunch then progressed to doing part of the dinner then all of it :D
Love the idea of a themed night (must try that out)

Splendid idea, will have to try and remember this for when my two are a bit older. Infact I'll add it to my Outlook calendar for 3 or 4 years hence.

i'd agree on the bero front. i used to love cooking and baking and the book was brilliant - tried and tested! and having a fiance who never had to do anything i would encourage you particularly with boys to let them get stuck in!
