Train to spain?

Hi there - I'm looking for any tips or advice you may have. I'm planning a trip to Barcelona next year and want to do it as MSE as possible, although I think it will cost a bit. We're planning to take the train there, not the cheapest option, but trying to do our bit for the environment, and the fact neither of us like flying at all! We want to make the journey part of the trip, probably with a stop over rather than an overnight cabin.
I'm not sure what is the best way of doing this. I'm saving clubcard points to get eurostar tickets for free. After that, I'm not sure? Would interrail be an option, or is it better to book individual trains? If anyone's done a rail trip across Europe I'd be interested to hear any tips or thoughts.
