I have finally received a letter regarding my claim for PPI refund from my claims company. This letter is asking for more information, when I took out car finance my mother acted as guarantor for me. Am I right in thinking that I'll have to put her down as a joint policy holder?

On your other threads, you complain of having no details of this finance. The Claim Company won't be able to somehow magic these up! You keep titling your threads "Black Horse", but your complaint is with the car dealer who originally arranged the loan and (mis)sold you the insurance.
Also, you do realise that you can do all this yourself and for free?
You are now filling a Claim Company's forms with the exact same information that you would provide if you simply wrote to the firm who originally sold you the insurance!
The Claim Firm will want fully a third (plus VAT) of any redress you might be awarded for simply forwarding your form to the lender!
Whatever you decide to do, you should also be aware that car dealers were not regulated prior to 2005 and that, as your PPI pre-dates this, they can dismiss any complaint you might make on that basis alone.
EDIT;
In 2016, you posted about having debt written off as part of a DRO. You should also be aware that written off debt can be offset against PPI redress.0
