Turning off Hot water supply to change Tap

Could always just turn the main water stop !!!! for the entire house off then open the hot taps, eventually the water tank in he loft will empty and stop the gravity flow of hot water coming from the tank.0

Similar issue. I don't seen to have any taps/valves within my flat under the kitchen sink or otherwiseand need to change bathroom sink tap. It's hot water one that leaks but it's a mixer so figure I'll need to shut everything off?
Here's a photo of the tank in the loft and all the taps/valves I can see circled. Which one(s) should I shut off before unscrewing my bathroom tap?
