Rose Elliott (books from library, some stuff online) has really good vegetarian recipes - she comes from a long-standing vegetarian family so has a lot of knowledge and understanding.
Cheapest way to cook pulses is to use dried, soak them, boil for 10 minutes, then cook in the slow cooker - the need to boil is because of a chemical that needs breaking down - it varies with different pulses, but 10 minutes covers all.
Also look up very old fashioned recipes - from almost any culture, but Italian and French especially have a lot of traditional bean stews that you can adapt to miss out the meat - my own trick is to cook, after the initial boiling, in vegetable stock.
This week we ate an English favourite - pease pudding with fried onions on top - great with jacket or wedgie spuds.0 -
Tesco do a tin of own brand spicy taco beans which are delicious. I heat them and have them in taco shells with finely chopped raw onion, peppers, cheese and a dollop of sour cream; or alternatively have them with the same filling and some rice, rolled in a soft tortilla pancake.0

I've used those beans to make a quick chilli if my vegetarian BIL turns up unexpectedly. I just add onions, mushrooms, frozen peppers and courgette (if I have any)0

I really like burrito bowls. You cook some rice and then separately cook some black beans with salt, cumin etc...
Then you build the bowl with a scoop of rice, a scoop of beans, a scoop of salsa. You can put finely chopped spring onions, sliced jalapeno peppers and grated cheese on top too.
I'm vegan so I do use vegan cheese which can be expensive, but it's nice without any cheese too. Lots of different flavours in one bowl.0
