Hi I am looking for some inspiration on some veggie meals without quorn. I like quorn but fancy using lentils and pulses for a bit of a variety

Google Mary Berry's recipe for veg and lentil cottage pie. No need to follow it slavishly - I played around with the recipe using veg I had in and put sliced potatoes on top instead of mash. Really tasty.
I've recently made the Hairy Bikers' sausage casserole. Someone on here said it was so good that it was worth making just as a bean casserole and I absolutely agree. I'll be doing that next week.0 -
Sainsburys have 40p large tins of mixed beans in either tomato or spicy sauce that can make the base for a bean stew (with other veg). I like them with rice (like "rice & peas").
They are called "Five Beans", not to be confused with Heinz "Five Beanz", which tend to be much more expensive.0 -
Jack Monroe's (https://www.cookingonabootstrap.com) bean goulash is good. I usually use a can of mixed beans rather than kidney beans as I'm not too keen on them. It's a really cheap easy dish. I usually serve it with rice but think it would be nice with a chunk of crusty bread or a crusty roll.

A real staple here is my very simple veggie chilli, you dont need to be exact with quantities of veg:
1 red pepper roughly chopped
1 onion sliced
1 tin of mixed bean salad
1 tin tomatoes
1 tin kidney beans
1 tsp paprika
1 tsp ground cumin
1 tsp chilli powder
1 tbsp tomato puree
Soften the pepper and onion in a little oil, add the other ingredients and simmer gently for half an hour (wont hurt it if you need to simmer longer). Reheats and freezes well.0 -

Oh my favourite has to be Dahl with spinach and mango chutney stirred through plus any veggies lurking in the bottom of the fridge usually get added.0

I make a lentil bolognaise with red lentils, grated carrot, finely chopped mushroom and onion, tinned tomatoes and Mar mite (you can use veg stock). I fry all the veg add the lentils, tomatoes and Mar mite (disolved in hot water) and simmer untill cooked adding water and seasoning as required. It freezes really well an CD can be used with pasta, in cottage style pie, lasagne, on top of jacket potato, or even in a pastry pie so is a really versatile base for meals. I tend to cook it in bulk and freeze in portions to use as I wish.Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0

A recipe I took from the back of a tin
A block of puff pastry, rolled out and cut into squares, because it's easier than circles.
Mix these together ;
A tin of mixed beans
Some chopped spring onions
Some chopped pepper. Any colour.
Some chilli flakes
Grated cheese.
Make into pasties, seal with egg, brush with egg, bake for 25 mins.0
