Maybe add a tin of toms and some tom puree? That wouldnt add many extra calories if you are trying for low fat and make it into a ministrone? A bit of garlic always helps but as youv'e already made it maybe the puree stuff? Also a dash of balsamic vinegar.0

Again - celery, carrot and onion for the 'base', but I add curry paste (small amount and taste, then add more if needed) or dried chilli flakes, if I'm in a hurry I add some gravy granules - usually chicken which also thickens, or vegetable stock cube/granules.
Simmer for ages to reduce naturally, intensifies the flavour.

it might be a bit late but i would dry fry a few rashers of smokey bacon, chop it finely nd add it to the soup!!- prior planning prevents poor performance!

I made a similar mistake last week - with an experiment of potato and leek soup. The stock I used was left over from a ham shank so should have been tasty. Realised later that I went wrong by using too many potatoes and not enough leeks! What a waste of a good litre of stock!! OH was not as impressed as usual - but beggar it - I ate it myself just added lots of black pepper!!!0
