Should I snail mail an appeal letter ( as per template on this forum) to Euro Car Parks, regardless of the fact that they have said I am now outside the appeals period?
Or just wait for the court claim and take it from there?

Personally I would appeal anyway. That way if it got to court you could show that you were reasonable and tried to resolve this.
When you complain to the landowner, tell them this.

As with anyone with a family and / or other commitments to meet, getting a bill for £160 out of the blue is very stressfull indeed.
Driving past an unseen sign is surely no way to enter a 'legal' contract. Seems to me like a simple way for these companies to legaly obtain your address from your number plate in order to bully you into giving them money.
I feel sorry for all those stressed out, vulnerable, people who simply pay up out of fear.

With regards to DRP, they are the lowest of the low
pond life and behave like a rabid dog.
We say ignore these idiots but for those who like
to play games with droids, there are plenty of things
people can do with their waste of paper
You now understand and you can help by telling your friends
about these vermin .... just pass it on
In close second place of course are the disgraceful solicitors
who are on some sort of funny stuff with the habit
of wasting a courts time?
It's all been noticed by government and we will not stop
