Cheese and wine evening / party MSE style

My boss retires next week and we're trying to organise a 'bit of a do' for him, there will be about 100 people and we're hoping to do a cheese and wine lunchtime gathering.......however......we have no idea how much food to buy!! :think:
Cheese (various types), crackers, french bread and grapes have all been suggested but we have no idea of how much to allow per person :eek:
We've got the wine sussed, as it's lunchtime we've said 1/3 of a bottle per person and we're getting water and fruit juice as well.
The other problem is that due to budget restraints etc:doh:we're trying to keep the cost down:o

I would buy 6 or 7 varieties of cheese and allow enough for everyone to have an inch cub (if cubed cheese) of each but supplement with penty of fruit, crackers, crudettes and dip etc to stop people scoffing all the cheese!

Personally I would think you could cut down on the wine budget?? If it's lunchtime, and assuming people are going back to work afterwards and/or driving home afterwards I would think 1/3 bottle per person is a lot.0

No seriously two or three hard cheeses, a couple of blue, large ish brie, roule, and a couple of different ones smoked, goats etc, grapes, green leaves to decorate.
Then bulk with celery, carrots,cucumber, bread sticks and nachos, crackers.
I am asuming it is snackypoos only, then some dips, nuts, crisps. MAybe a cake.
As for drinks a few wines, juices, splits, and soft. It is luchtime and as someone has said people need to go back to work and drive.0
