I will make some cakes as well as Coconut Macaroons and will use butter. That is really useful as normally I would just use margarine for cakes.

I'm Jewish(we don't eat pork either) and my boyfriend isn't. Every year his mum makes the BEST mince pies ever. Last year I asked her how she got her pastry so flaky and scrummy. She then told me that she uses half butter and half lard. I was devastated. It was clearly an oversight on her part as she is fastidious about pork and bacon when I am around.
Now I have an ethical and moral dilemma as they are the best pies ever and I have eaten them for the past 4 years and now this year I can't but really want to.
Did you mention the dilemma to your MIL? If not, maybe your bf can diplomatically mention it to her. She could maybe use Trex instead. It might not be anything to do with the fat she uses - some people just have the knack of making good pastry - cold hands for instance, or just knowing the exact moment to stop adding water. My pastry is good but my MIL makes pastry which resembles cardboard. :rotfl:0 -

Personally, (similar situation as I'm veggie), once I'd found out I wouldn't eat the mince pies. To be honest she sounds like someone who would understand and work round it if you told her, so try and slip it into the conversation0

Joeyemma-your post reminds me of what I did during the summer.
As I am muslim anything with gelatine pork or alcohol is forbidden, the ice cream van man visited a couple of months ago and I treated myself and nephews and nieces to ice cream , he kindly pointed out to the little ones that the strawberry syrup which they love contained gelatine -all the little ones who are aged between 3 and 7 declined the sauce after hearing this except me.I shouted out I still want my syrup -Im 26 years old and my mum was so annoyed with me but i really could not bear to have ice cream without it-I also love gummy bears, 1 penny mixtures,angel cake , jelly and trifle and activia yoghurt which all contain gelatine.The strange thing is I would never eat a sausage or drink alcohol but can live with eating items containing gelatine iyswim.I think I am going to go to hell.Love can tame the wildest0 -
Didn't know you could freeze margarine. Is pure margarine suitable for baking cakes?
It's fine for baking cakes. In fact they did a small booklet with some recipes in at one stage.
You can freeze margarine, though I only bother if the expiry date is close, if the expiry date is a couple of months away I just stick it in the fridge.0
