Parking Eye fine

Sorry for generic title, but couldn't come up with anything more creative >_<
I was in a car park for a KFC and Starbucks, and had a KFC followed by coffee. The signage stated 1 1/2 hours, I overstayed without realising by around 15 minutes. I have checked the bank statements, and both of the purchases are on there- but the ticket was issued on 31st December, and the statement showed 2nd January (Contactless).
Firstly, are those purchases going to help me? If so, should I send them to Parking Eye via appeal, or contact the stores directly? Which is most likely to help me out, because as a paying customer of the car park I'm pretty sure I'm not the one they're looking to fine.

the bank statement will be good , contactless unlike a basic debit card iks not taken immediately (off line transaction)
it should also be noted that PE as a member of the BPA should allow a grace period , as you enter and read signs and also as you exit , you clearly were NOT parked for 1.5 hrs + 15 mins , you could easily have spent 15 mins both finding a space and reading signage and exiting the complex , PE ANPR cameras ore on the entry/exit NOT the car park
I would have a good kick off with both starbucks and KFC first , failure to cancel may result in a change of coffer sujplier and also a change of dietSave a Rachael

Thanks for that, that's kind of what I thought. I'm about to appeal with Parking Eye, they want to know all the details- I understand normally it's best not to admit you are the driver, but in this instance would it be ok? I kind of don't expect this to go too far.0

The problem is they specifically ask who was the driver when you appeal! Not sure how to get around that without lying, which seems risky to say the least...0

Got it, thanks! I've just sent out an email to Starbucks customer service first to see how they respond, KFC customer service links are so awful I gave up. >_<0

No they don't.
I have done hundreds for people and 'registered keeper' is a choice (might be listed under 'other' these days).PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
