Waiting on a pay rise to be processed and now redundancy

Back in early November I was advised I would be getting a pay rise. My manager had sign off for the pay rise from his boss and his boss's boss. We sent of the signed forms to HR on 7th November to then be told the company had put a hold on pay rises and was assured by higher up that I would get my pay rise back dated.
Last week I was informed that brand within the wider company will be closing and that we will be made redundant. Later this week I will receive my first consultation. I can imagine my redundancy payment will not include my pay rise.
Can I ask for a recalculation at the requested pay rise from 7th November?(I have the submitted email and signed documentation)

You can ask and try to make a case that that is your contractual rate.
Statutory redundancy is based on a weeks pay at a specific date capped at £489.0
