nest heating schedule

I'm having a problem understanding the Nest heating schedule. I'm moving from a conventional system with timed controls where I hardly ever adjust the thermostat.
If I add a temperature to the Nest schedule, I think this means that it will try and reach that temperature at that time, But what happens after that? Does it try to maintain that temperature?
If I wanted to start by replicating my dumb on-off system, would I add high & low temperature in pairs?
I'm happy for the intelligent Nest to take over eventually, but I'd like to start by laying down some rules.

It will reach the temperature by the scheduled time and maintain it until the schedule tells it to change.
I have mine set to 19° at 7am, then 9° at 10am (which is essentially off). Back to 19° at 6pm and 9° again at 11pm.
I disabled all the auto-schedule stuff, it never worked reliably for me.0
