Best carrot cake recipe?

I've been asked to make a carrot cake to take to a christmas celebration in a couple of weeks and i havent made one for years and i havent got a good fail safe recipe.

I need to use my 8 inch pans to make it so i wondere d if anyone here has a tasty easy recipe i can use?

    I don't know if this is any help? It's for carrot'n'orange cake.

    I'll copy'n'paste the recipe as set, then tell you the adjustments I make when I make it.

    CARROT AND ORANGE CAKE


    225g finely grated carrot
    200g soft brown sugar
    150g butter
    2 eggs
    200g SR flour
    3 tsp baking powder
    2 tsp cinnamon
    ½ tsp nutmeg
    1 tsp mixed spice
    120g raisins or sultanas or a mixture of the two

    50g chopped almonds or walnuts
    2 tblsp Grand Marnier or orange juice
    1 tblsp grated orange rind
    For the icing
    250g cream cheese
    1 tblsp orange juice
    2 tblsp grated orange rind
    40g icing sugar


    Oven: 180 C. Line a 22cm cake tin with greaseproof paper. Melt butter in a bowl over hot water. Beat in sugar, orange rind, carrot and eggs. Sift flour, baking powder and spices together then fold into the mixture with the raisins, Grand Marnier/orange juice and nuts. Turn mixture into tin, bake for about an hour until cake is springy to the touch and a skewer comes out clean. Cool in tin for 5 mins then turn out onto wire rack. Beat all icing ingredients together and spread over cake.


    I've turned the bits I alter to red, for ease of reference.

    I don't use nuts, I use extra raisins or sultanas to the equivalent weight.
    I don't bother with the icing - I used to make this for Mr LW's lunch box when he was working, and icing would've been messy; and we find we don't really need/want icing, it's delicious without.

    I've never had a good result with carrot cake, but I am tempted to give Nigella's (shown on TV a couple of weeks ago) a try.

    Mary Berry's is good if you're looking for a traditional recipe, but it needs plenty of spice. Delia's ultimate one is also good. If you're looking to do something a bit 'off piste' then I once made a lovely cake by using a basic recipe but adding some golden sultanas that had been soaked in some strong Earl Grey tea. It was a bit different and it was delicious :)

    I’ve got an old woman’s own one I use. It has walnuts and cinnamon in it and is much loved by everyone I know!

    I use the cranks carrots cake recipe available online it contains more carrots than flour so it quite a moist ( hate that word) dense cake with coconut and sultanas easy to make vegan by replacing the eggs with banana

    Thats the problem I’ve always had, my carrot cake never seems to cook thoroughly :o

    Bananas and carrots, though...double yummy!

    This has been my favourite carrot cake recipe since I first made it for a friend when we were both 18 and wanting a treat. I've never had a problem with following this recipe, and at 18 I wasn't a great cook or baker yet!

    It's wonderful plain, but even better (imo) with butter, vanilla or cream cheese icing with a little mix of cinnamon/caster sugar sprinkled on top.

    Ingredients:
    4 eggs
    2 cups of grated carrot
    2 cups of flour
    2 cups of sugar
    1 1/2 cup of veg oil
    2 tsp cinnamon
    1 tsp baking powder
    1 tsp baking soda
    1/4 tsp salt

    Method:
    1) Combine the eggs, sugar and oil in a large bowl.
    2) Combine the rest of the dry ingredients in another bowl
    3) Add the dry ingredients (2) to the now wet mixture (1) and mix until combined.
    4) Add the carrot and mix roughly until all carrot coated with mixture.
    5) Pour into your 2 greased or lined tins and bake for 30-45 minutes at 180 degrees c. *Skewer or knife will come out clean and sponge will 'bounce' back when pushed with 1 finger.

    I usually make it with no changes and for special occasions as it's so rich, but here are a couple of alternatives/additions I've tried over the years:
    *Can be made with a little less oil by using 1 cup of veg. oil and 1/2 cup of stewed apple sauce.
    *1/4 tsp of orange essence adds a different flavour to the traditional plain carrot/spices. I usually add this if I make it for Boxing day spreads as I think it makes it a bit more 'seasonal'.
    *You can add 1/2 cup of crushed walnuts with the grated carrot if everyone likes them/can eat nuts...and when I do this I use some as the 'garnish' on the icing.
