I used a countertop small oven - it has just one oven so there is no other oven to switch on by mistake. I also tested the oven today and it is working correctly and it was set to the correct temp too. I also had to use oven gloves to remove the dish too.
However, the rice soaked in all the bowls did not absorb anything neither the water, the milk or the coconut milk.
Out of interest, what do the instructions say on the back on the packet? I ask only because a friend once made me some goddamawful pasta meal that she insisted she'd cooked correctly and it was just me who disliked it. I found the empty packet, read the back and discovered she'd cooked it incorrectly!
Admittedly it would be unusual for pudding rice to state different instructions to normal but worth checking out.0 -

I can't imagine what could be wrong with it but it does seem to be the rice that's the problem - not to have swelled up when it's been soaking for hours is very strange.0 -
Could you try cooking some of the rice in a standard savoury method? Rice, boiling water, boil then simmer on the hob until cooked? If it is still not cooked after 45 mins on the hob, I'd say you have a duff packet.0

Is the rice way out of date? mind you I'd have thought it would have to be years out of date to be that bad.0

I once heard an Indian chef state that his mother wouldn't use rice until it was at least 2 years old and see that aged basmati rice is available now. Interesting query OP. Love a mystery! The beautiful thing about learning is nobody can take it away from you.
Thanks to everyone who contributes to this wonderful forum. I'm very grateful for the guidance and friendliness that I always receive from you.

I use Sainsbury's pudding rice and get consistently good results with it, although i have to say I haven't bought any for ages as it was on special offer a couple of years ago0

I use the slow cooker method,
4ozs rice
two ozs caster sugar
1 tin of evaporated milk
one and a half tins of water using the empty evap tin
half a pint of semi UHT milk.
chuck it all into the SC and turn on low and cook overnight in the morning I have a lovely creamy rice pud.
I also stir some sultanas in at times, and sprinkle nutmeg or cinnamon on the top. Real comfort food for this nippy autumn weather .
I dish it into a ordinary large pyrex bowl and once cold it goes into the fridge and gets used through the week for a pudding after my evening dinner, or as an extra after my lunch.
Sounds as though there is a problem with the rice0
