Failed rice pudding : )

I tried to make a rice pudding today - it went wrong :mad:

I followed my usual Mrs Beeton's recipe (soak rice, stir, in oven at 150 for 2 1/2 hours etc). The pudding came out still liquid, no 'crust' and the rice still dry and crunchy.

The only different was that I used coconut milk instead of dairy milk (I don't like milk).
I am wondering if it failed due to the lack of fat content in coconut milk?

Any ideas please?

    Just because its a white liquid called "milk" doesnt mean it has any similarity to a diary product :)

    why do you believe coconut milk doesnt have any fat ? - according to wiki it is over 23% fat

    Maybe it's too much fat? I make mine with 1% milk, rice, sugar, bay leaf and nutmeg. The rice absorbs so much liquid that what's left of the milk goes really creamy.

    Yes, I know coconut milk is not a dairy product, but as other people have used it to make rice pudding then it obviously can be done.

    Wiki might say 23%, but that is not what it says on the back of the coconut milk package I used.

    No the coconut milk I used was low fat.

    The odd thing was the rice didn't absorb anything. I have used skimmed milk before and that was OK, but not this time.

    It's strange the liquid didn't soak into the rice - even plain water would do that.

    Did you turn the oven on? Any chance it turned itself off (automatic timers, power cut, etc)?

    You have made me wonder if there is something wrong with the rice (new pack opened to make this pudding).

    The oven did work and heated as the dish was warn when I took it out...and it warmed the kitchen too!

    I might try soaking some rice in water to see what happens.

    Take out a couple of spoons of what you've got, toss that into a saucepan and gently simmer it for 15-20 minutes, see what happens. I bet it plumps up and does its job ... in which case, chuck it all back in the oven for 1½-2 hours.

    Re the oven: if the oven was on for the full time, is there the chance that 1-2 of the elements have blown and the only one that's working is the one closest to the kitchen, giving the illusion it's working as it warmed the kitchen?

    I don't think it's your ingredients.... I bet this is equipment failure of some sort.

    I used my combination microwave / oven table top one rather than my bigger main oven. I will check to see if this is still working probably.

    Out of curiosity I now have three bowls of rice soaking in the kitchen one with water, one with skimmed-milk and one with the coconut milk to see what happens :)

    You'll be labelled a loony ... that's what. Just don't let anybody catch you with pet bowls of rice!

    During the original long cooking session, did you look/check give it another stir? It is (long shot/vaguely) possible that it didn't do much as the rice wasn't that well stirred/integrated at the outset.

    I'm a "cooking fiddler" I'm afraid. I have to look/poke about/stir things :)

    My money's still on equipment malfunction or inaction though....
  • Rice pud works great in a slow cooker, though it doesn't form a skin unless it is allowed to cool.... (which suits me as I dont like the skin :) )
