Whats your favourite recipe?

It can be anything, something you cook most weeks or something you save for special occasions. Sweet or Savoury.

  • Mine is egg less chocolate cake. I am not very good at making traditional cakes but this one always seems to work.

    (ingredients are odd quanities as I halved the original)
    187g plain flour
    187g castor sugar
    1/3 tsp salt
    1tsp bicarb soda
    22g cocoa
    90ml vegetable oil
    1 tbsp vinegar
    1 tsp vanilla exract
    250ml cold water

    sift flour, sugar, salt, bicarb, cocoa together straight into cake tin
    Make three wells
    Pour oil into one, vinegar into second, vanilla into third
    Pour water all over
    Stir well with fork
    Bake at Gas 4 approx 30 mins

    Sometimes I make in tin, sometimes I do in bowl and work quickly to get into tin.

    My go to would be coronation chicken.

    I know it sounds odd but it's great with rice, on potatoes, in a butty, for lunch or dinner (not so great for breakfast).

    My 'healthy' recipe is:

    Cooked shredded or diced chicken (often leftover roast)
    Mango chutney or diced fresh mango or marmalade
    Curry powder (any you've got in the cupboard)
    Sultanas
    Dry or fresh chopped apricots
    A dash of Cinnamon
    Natural greek yogurt or quark

    Mix it all up and stick in the fridge for about half an hour before using. Keeps about 3 days refrigerated in an air tight container.

    It's about ratios so it's a bit of trial and error to get the mix you like and it's very very important to remember that the curry get stronger as it rehydrates.

    You can also add flaked almonds, grated carrot, celery, diced apple, halved grapes.

    Lentil soup

    250g bacon or gammon
    250g red lentils
    1 medium onion
    2 carrots
    stalk of celey
    2 medium potatoes peeled
    1 bay leaf
    2 litres water
    salt/pepper
    chopped parsley

    Chop veg finely, bung in pan with everything else bar the parsley and pepper. Cook gently until lentils are virtually dissolved. Remove & discard bayleaf. Remove bacon, take fat off and chop finely add back to pot. Check seasoning & add salt /pepper to taste. Add parsley before serving.

    Simple but oh so good!

    Spaghetti and spinach

    Cook spaghetti. Drain ( keeping some of the cooking water).
    In the pasta pot, chuck in washed spinach and put the lid on for a few minutes so it wilts a bit.
    Put spaghetti back in along with a good splash of the water, a good glug of cream and lots of parmesan.
    Salt and pepper and enjoy.

    Our favourite one pot, 10 minute meal.

    Pork belly slices
    Bit of oil to fry onion and garlic
    2 Chopped onion
    2-3 cloves Minced garlic
    2 Chopped pepper (any colour)
    1/2 pint water
    Beef stock cube
    2 tbs tomato sauce or better tomato paste or better still sun dried tomato paste
    1tbs soy sauce
    1 tbs Worcester sauce
    2 tbs brown vinegar
    Cayenne
    2-3 tsp made mustard
    1 -2 tbs brown sugar depending on taste

    Put pork in oven to make some of the fat run
    Make sauce
    Discard any fat from the pork, pour over sauce, cook on medium heat for about 45 minutes.
    Serve with salad and a nice bread.
