Anyway - one of my favourite quick meals is cheese on tuna on toast.
Mash a small tin of tuna, and after toasting the first side of two slices of bread, carefully spread the tuna onto the untoasted side (salt and pepper to taste) and then layer sliced cheese on top and put back under the grill. It's very filling.
I've also been known to make a three course meal from three slices of toast.
The first course is plain buttered toast
The second course I add salt and pepper (or bovril) (or marmite) to be my savoury.
The third course is my sweet and is usually marmalade or sometimes jam.

I posted this originally on the crumble thread, but someone helpfully suggested that it might be good to put it on here as well.
Once when I fancied an apple crumble, I used some cooked apple and crushed up some honey nut cornflakes, put them on top and bunged it under the grill for 5 to 10 minutes. It made a nice alternative to normal crumble topping.
It is also nice on icecream as a topping.A woman is like a tea bag. You never know how strong she is until she gets into hot water.:D0 -
Knowing all the rushing about we've been doing this week with ferrying our son to school for the school play got me thinking about what I cook that still constitutes a real meal but is cheap and quick to get to the table:
Some of mine are:
Muffins with a topping of ham and scrambled egg with baked beans
Sardine burgers [recipe already posted on another thread elsewhere]
Pizzas made with pitta bread under the grill using topping I've whizzed together and Edam
Pasta with basil, olive oil and lemon zest with a little juice
Pasta with Pesto [I use the Lidl] one
Wondered if anyone else had any other cheap/quick/nutritious suggestions which fit in with the OS ethos. I would be lying though if I didn't admit that I still reach for that overpriced convenience box sometimes. Heh Heh :rotfl:

when I need a quick meal I usually reach into the freezer and grab a portion of chilli - ten mins zapped int he microwave and it's ready. I'll serve this with cheese on a microwaved Baked Potato - all in all takes about 15mins max and you just leave it to cook, without standing over a pot.
Alternatively I also buy ready meals when they are yellow stickered to a heavily discounted price. These are handy to have in.

microwave a sweetpotato for 4 mins, serve with big blob of philly-type cream cheese
it's lovely with....
dead quick chop salad:
mix together tins of kidney beans, sweetcorn, and Lidl's lovely green beans
add chopped cucumber, red pepper, whatever veg you have to hand
gloop from french dressing or mayo on top
lovely with tin of lidl tuna or skinless sardines in olive oil
1 minute soup:
grate a carrot into a mug
bit of root ginger
+ whatever is to hand e.g. couple of spoons of tinned sweetcorn, few shreds of chicken...
some of that swiss veg stock powder
top upboiling water
keep a bag of carrot cut up into sticks and bagged up in the fridge ready for snacks or to put to the side of sandwiches for the kids etc.
