We have just received a court summons after not paying a parking ticket but we don’t remember receiving any notification of any fine?

It isn't a summons, it wasn't a fine, and you don't 'appeal' it.

Too late for any appeal. You are engaged in court proceedings now. Read the newbies thread, diarise when you need to file your AoS saying you are intending to defend (but not what your defence is) and when you have to file your actual defence.
Then come back on here with more detail:
who is the PPC
where is it claimed you were parked
details of what your defence might be - eg:
1. not driving and can't be liable as RK under POFA
2. you were elsewhere on the day in question and can prove it
3. inadequate signage
4. you are a leaseholder and have pre-granted rights to park
These are examples, some will not apply to you.
When you've thought about what your defence might be and how you will prove it, you then come on here with a draft defence and ask for suggestions as to how it might be firmed up/improved.
There are no shortcuts here. You need to read as much as you can in the next few days to educate yourself. Find some threads on here with similar facts to yours, or perhaps even the same car park. Have a look at Parking Prankster's blog. You will get the gist of how the industry works and what defences work.
Defending proceedings takes a bit of work, but if you show willing to put that work and effort in then regulars will help you by critiquing your draft defence (and later your evidence).Although a practising Solicitor, my posts here are NOT legal advice, but are personal opinion based on limited facts provided anonymously by forum users. do the AOS online (nothing else at this stage)
then draft your defence based on other recent defences published on here in the last few weeks or so (there are plenty to read and to plagiarise)
then post it on here for critique0
