I go to my FB wall, click on Friends, see:-
All friends - Recently Added - New Posts - Current City - Home Town
should I click on New Posts, the page refreshes and all the Friends that have created a new post since I last looked, are identified by a pale blue number. This gives me the option to look at them if I want.
BUT, for some of them, I don't want to see, nor do I want to be informed they have. I have un-ticked Notifications, but that makes no difference. I have been to THEIR wall. clicked on "unfollow" so it shows "follow" and that makes no difference.
I think I read somewhere you are able to block them but keep then as friends, is this so and how ? please.

If you unfollow friends you won't see their posts on your Facebook news feed (where you are taken when you log in).0
