Made me a casserole tonight

    If you're trying "bung it in" cooking, one of the best "tricks" i do is to use your condiments. A squeeze of tomato ketchup or brown sauce or the like in a stew/casserole etc always gives it a lovely kick. :)
  • my stews/casseroles tend to be whatever i find to chuck in lol

    yesterday we had a chicken/veg/curry type casserole/stew thingy :rotfl:

    loads of bits of veg: carrots, swede, onions, and leek
    some chicken
    chopped tomatoes
    2 veg stock cubes
    1 pint of water
    herbs - thyme and rosemary
    2 tsp chilli powder
    handful of soup/broth mix (pulses etc)

    left it on the hob for a couple of hours, and it was lovely.

    peel and cut them all into chunks..varying sizes -so the smaller ones break up and thicken it... put a lid pour in water -about 1/2 way up the veg...put a lid on,bring to the boil then reduce the heat and simmer until cooked, throw in a tin of processed peas, i throw the liquid in too, and some chunks of corned beef..great for using up those half tins...
    keep on a low heat -without the lid and cook so the liquid reduces down... so its nice and thick.then just season and your done..
    It is better still if you warm it up the day after - it thickens...
    we had dumplings... but you can also do it with yorkshire pud, or stick a pastry lid on it..

    It is a seriously cheap, tasty and easy meal...and you can freeze it too

    Its something we had as kids.... and we all still love it... hope you have a go... give me a yell if you have any questions...

    by the way..take a look in the charity shops..casserole dishes are always in there really cheap and great for whacking stuff in the oven and in the freezer..and you would probably find a SC in there...

    Right....well here I go :D

    had to come back to find this and how to make it, as got all the stuff, and kinda stood there wondering what to do next! :o

    Well done for being brave and giving it a try!

    If you do buy a big bag of carrots or parsnips and decide to chop, and freeze - I boil my carrots for about 10 minutes rather than just a few mins as I am impatient when it's time to cook them for dinner and they always seem too crunchy still.

    I then get a spoon and spoon about a serving size amount into each separate bag. That way when they all freeze in one lump (like they do), it doesn't matter as I need the whole bag full anyway. If you have company, just use extra bag for each person ;)

    Well I bought some 'Winter Vegetables' in tescos, and thats all on the boil now, with about 6 potatoes in there aswell, thought I may aswell fill the saucepan up (it's the biggest saucepan I got and first time it's been used....had it over a year...)

    So, I got enough food in there for a few months. Not sure I have enough corned beef now?

    Got a 340g tin. Will I need more?

    Nope.... i only used half a tin that size-cos hubby hijacked the other for sandwiches!!! and i made a huge pan full... but you can put it all in if you like

    If you do freeze a bag of carrots whatever, and they clump together, try just banging the bag on the worktop. It always works for me, with cheese or veg.

    Well thats scrummy too!! So thankyou!

    Can't be at all bad for you either. Just a load of veg, can of corned beef, and potatoes!

    Got enough for about 5-6 portions too. I aint made a meal out of it tonight as I'm not hungry, was picking at bits right the way through making it! So I had custard and a bit of cake instead! But, it was said that it will be better tommorow!

    When it's cooled completely, will freeze some up.

    Cost around £2.50 in ingredients, dunno how much in electricty. Not bad for 5-6 portions.

    So whats next :D

    I'm a lazy arsed bloke who lives on my own, but most of the time I do cook. I had a lazy week recently when I lived on sandwiches and beer. I had my first failure recently too when I loaded a well tested curry recipe up with loads of carrots I had kicking around and it tasted wrong.
