I would consider sharing my long letter to the Co-Op, once I redact it. I bet you all find hundreds of flaws in it, but IT WORKED :P
Well done by the way. :TPlease note, we are not a legal advice forum. I personally don't get involved in critiquing court case Defences/Witness Statements, so unable to help on that front. Please don't ask. .
I provide only my personal opinion, it is not a legal opinion, it is simply a personal one. I am not a lawyer.

Having read through the threads and advice on here I am going to write to the CEO of Co-Op and wondered if you would share with me the letter you wrote?
He offered to share it, we agreed it would be a good idea, then didn't deliver on the offer. So many, who grab so much free advice from experts giving freely of their time to help them get rid of their problem, just can't be bothered to come back and provide some help to others.
My suggestions to you are as follows:
1. First and foremost, ignore the debt collectors (*) - they are impotent, and can only send you letters - they cannot do anything more than that.
2. Write to the Co-op 'from the heart', tell that there was every right to use the M&C Bay: the fact your son was too unwell to exit the car (and was therefore not picked up on the CCTV camera) doesn't invalidate the use of the bay - if it does, where does it say so on the on-site signage? Demand that the Co-op brings their parking company to heel, and gets this ticket cancelled.
3. NPE are a totally benign parking operator in terms of litigation. Nothing to concern yourself unless you receive a vanishingly unlikely LBA or MCOL (**)

4. Read the NEWBIES FAQ sticky, posts #1 (to learn the game you're now caught up in), post #4 (* about debt collectors) and post #5 (** for acronyms we use on the forum).
5. If you need any further advice/guidance, please create a new thread of your own, this one is to be treated as dormant. Please note, we are not a legal advice forum. Thanks for your advice. I will write to the Co-Op CEO and Bellgold Properties Ltd who contract NPE.0
