Advice for converting gas fireplace

Hi all,
My partner and I have just moved to a newish home (1999) with the original gas fireplace that we would like to replace, ideally with a wood burning stove or an open fire.
We have already had the gas supply capped off so we are ready to pull the gas fire out. We also definitely have a chimney as you can see it built up the side of our house so I believe in right in thinking this is a chimney and not just a flue for the gas fire.
We're both pretty handy and would be happy to do the work ourselves but I'm struggling a bit to pin down the details through my googling. I was hoping someone here might be able to enlighten me on what we need to do next and things we need to consider when doing the work.

You'd need a HETAS installer. There's quite stringent regs associated with fire installations of any kind these days.Everything that is supposed to be in heaven is already here on earth.
