Bread is one thing you shouldn't keep in the fridge as it will shorten it's 'shelf life' rather than extend it! There's a good technical reason why but I can't remember it offhand!

    Really?

She said it keeps forever in the fridge.

It drives her nuts though. Her husband puts it in the fridge, she takes it out, he puts it back in the fridge, she takes it out........

We keep bread in the fridge as well but not using the top crust helps it last even longer :D

Found this on US website, doesn't explain why but does confirm what I said:

At home, fresh bread will stay fresh longer if it is held at room temperature. Staling will be slowed or halted by keeping bread in the freezer. Bread stales the quickest in the refrigerator. So, why do many people store their bread in the refrigerator? Answer: To keep it from molding. A warmer temperature will keep bread fresh longer, but it also causes bread to mold faster. Refrigerator temperatures slow the growth of mold and freezer temperatures will stop mold growth. (Answered by Dr. Kristy Long, Food Sciences & Home Ec Specialist.)

I do this for homemade (breadmaker) bread:

Day One: leave on worktop, cut side down, or with cut off crust replaced on cut side.

At end of Day One, wrap loaf in plastic bag, which makes the crust go soft, but stops the whole loaf going stale and hard. It's then fine to use as bread for Day Two, and toast for Day Three, which is as old as it ever gets in our house - in fact, most loaves don't make it to Day Two.

Ooooh, how spooky's that, there's the breadmaker beeping for tomorrow's* loaf - must go!

*My system is to take the loaf out now (10pm), leave it to cool on the rack overnight, then it's the best combination of fresh/ cutable for the morning's packed lunch sandwich making extravaganza.

Fresh bread from the bakers keeps fresh for a week in the fridge, I keep it in it's paper bag then put it in a plastic bag. If it's just in the paper bag it go dry,or in a plastic bag mouldy but the combination keeps it fresh. You can use a clean tea cloth instead of the paper bag.
