Day trip to Guernsey

Hi everyone,
I'm thinking of arranging a surprise day trip to Guernsey for my husband and children from Poole.
The offer we have runs from Sunday - Friday and as the kids are at school it means it'll probably be a Sunday in October if we visit.
The times of the Condor mean we would have just over 4 hours on the island, although I believe we have to check in 40 mins before departure.
I would appreciate it if anyone can give any advice on the best places to see / go during that short time and whether things are open on a Sunday.
