Find a new garage. Thermostats don't even open until around 82-88C because that is what the engine needs to be operating at at a minimum and the reason that coolant systems are pressurised is because it raises the boiling point of the coolant above 100C. Most cars run around 90-95C in normal use with around 110-120C being overheating.
