Advice re address change

We sold our house and moved out 3 weeks ago. Originally we were going to move in with parents until we found somewhere to buy. 2 weeks before we moved out, a bungalow owned by hubbies family went on the market for sale (it was tenanted and they moved out so it became empty) family suggested we move in rather than it being empty. Day before we moved in an offer was accepted, cash buyers who wanted to move quick so we were under the assumption it would literally be for a matter of a few weeks.
Told the majority of people a change of address to parents house (to save changing it again a few weeks later). Did tell dvla, car insurance, banks etc. that we'd moved into bungalow. Utilities and council tax at the bungalow went back to hubbies family as the owners. We told council tax moving in with parents (not the bungalow)
Now, the buyers of the bungalow have pulled out so its not looking at temporary. Its good for us as it gives us more breathing space but I'm panicking now.
I'm worried now that we've done the wrong thing. Our addresses for different things aren't going to match up! We could be applying for a new mortgage any day and I'm not sure how it might affect our credit rating? With telling council tax that we are with parents - does that update the electoral roll or is that different?
Have we done the right thing?
