Cheers for the help, I was surprised at quite how detailed their reply was, but yes obviously the majority templated, would make sense.
As for you mentioning a contract from the landowner, or witness statement I don't seem to have either - on the subject this is all I find mentioned by them:

Parking Eye can confirm that the above site is on private land, is not council owned and that we have written authority to operate and issue Parking Charge Notices at this site from the landowner (or landowner's agent).
And I think that's all I can do really is keep on about the grace period, obviously signage etc although past the camera zone - it's obviously there & they've posted a mass of evidence against this.
We did payment through the app Pay By Phone, which we had to set up at the car park as didn't have the £7 or so in change. They've shown in their evidence our tickets purchased:
We did 2 separate transactions, one just adding time on.
First payment was at 11:38 and 51 seconds, for 4 hours parking.
A second ticket was purchased at 3:42 and 57 seconds (took us a couple of minutes to enter details again once we had the notification of time lapsing) for an extra hour.
So all in all, 5 hours of parking purchased at 11:38 & 51 secs, with the slight gap in between of buying a second ticket which then expired 16:42 and 57 seconds.
They've said we entered at 11:30 and left at 16:46, so it's taken us 8 minutes to find a space, give us time to read signage & make payment, 4 minutes to purchase a second ticket, and close to 3 minutes to then return to car, exit the space and queue to go out, so we'd have been out of the space prior to this. All in all, 15/16 minute overstay total, for 5 hours.0
