Gatwick South Terminal no longer has water fountains. I don't think it's fair on the bar staff (and bar customers) to expect them to fill water bottles from their taps. I think buying bottled water is a waste of money and resent airports and airlines forcing us to do so.
So how do you go about getting a drink of water at the airport after you've been through Security?

The only time I ever buy bottled water is at the airport, that's because I have limited options.
I usually buy Boots' offer of 2 of their own brand water for £2.00.
It's not going to break the bank.
    Really, it isn't.

They did when I went through there just over a week ago.

IIRC the water fountain is by the disabled loo near the ladies and gents toilets

In the north terminal the water fountain is in the security hall
